– The fine rice vermicelli should be separated from the stacks and the individual pieces must be put on a plate within 5 minutes after removing from the cool water basin. Otherwise, the vermicelli may stick together and become difficult to separate. To keep the vermicelli soft and prevent it from drying, cover it with plastic wrap or lid so that it can be preserved for 1-2 hours.



1. Prepare a colander, two basins and a fully boiled water kettle.

2. Stack the fine rice vermicelli into the colander, up to 10 pieces per stack. Place the colander into one of the basins. Fill the other basin with cool water (about 3/4 full).

3. Pour hot water over the stacks of the vermicelli in the colander and basin until they are completely submerged for 1 minute and 15 seconds. (Do not exceed 1 minute and 15 seconds, as the vermicelli may become too soft and fall apart).

4. Remove the colander with the vermicelli from the hot water basin and immediately place it into the cool water basin for 1 second. Then take the vermicelli out from the colander, allow it to drain, separate it from the stacks and put individual pieces on a plate. (It’s recommended to use gloves while the vermicelli drains to avoid burning yourself).

5. The vermicelli is now ready to be served with vegetables, roasted meat, or seafood and preferred dipping sauce.
