Step 1: Immerse the noodles in boiling water for approximately 4-6 minutes, then rinse with cold water, allowing the noodles to drain. This process enhances their texture and flavour.
Step 2: Once drained, the noodles can be utilized within a timeframe of 6-8 hours in various dishes, such as noodle soup, fried noodles, and dry mixed noodles.
1/ Noodles in soup: Prepare a soup base using shrimp/meat/steamed pork roll, carrot, onion, and other seasonings. Pour this over the pre-blanch noodles to serve a comforting bowl of aromatic hot noodle soup.
2/ Stir-fried or mixed noodles: Sauté vegetables, mushrooms (you may add meat or seafood), season and combine with the noodles. Stir for approximately 30 seconds to serve hot and flavorful.
3/ Crispy fried noodles: Fry the dry noodles at 150-160 degrees Celsius until crispy. Drain and serve with cooked shrimp, squid or meat.
